Crunchy Cut Cakes


Ingredients:

Maida  flour - 1cup

Egg - 1no

Cardamom - 2no

Powdered sugar - 1/2 cup

Vanilla essence - 1/2tsp

Baking powder - a pinch

Oil - to fry

Preparation:

1)In a bowl, add maida, egg, powdered sugar, vanilla essence and powdered cardamom. Mix them well and make a dough

2)Close the dough with lid for 15mins

3)After 15mins make small balls and spread them round(not too thick nor thin) Then make any shapes  

4)Heat a kadai, add oil deep fry the shapes.

Note: cake should be crunchy, not to be fried dark brown then it will become hard

Butter Cake and Merry Christmas!!


Ingredients:

Butter - 50g

All purpose flour - 1 cup

Milk - 1/2 cup

Baking powder - 1/2 tsp

Powdered sugar - 1/2 cup

Egg - 1 no

Vanilla essence - 1/2 tsp

Preparation:

Beat the butter nicely and make it smooth (please have it in room temp before beating)

To it add egg, vanilla essence, sugar, baking powder, milk ( all items at room temp)

Add flour to it and mix it into a smooth batter

Pre heat the oven for 15minutes at 150 C.

Pour the batter in a tray and heat the tray for 30 minutes.

The cake is ready to be served.

Coconut Cookies And Gift


Ingredients:

All purpose Flour - 1 cup

Baking Powder - 1  pinch

Coconut Powder - 1/2 cup

Salt - to taste 

Sugar powdered- 1/4 cup

Butter - 25gms (beat well)

Honey - 1  tsp

Water/Milk - 3 tsp

Vanilla - 1 tsp


Preparation:

Beat the butter nicely and make it smooth

To it add vanilla,honey,salt, sugar, baking powder, coconut powder and water/milk

Add flour to it and mix it into a smooth dough.

Pre heat the oven for 10 minutes at 150 C.

Make round balls of the dough and flatten it on a butter paper and place it in the oven.

Heat the dough for 15 minutes and the cookies is ready to serve.

Prawn Fry


Ingredients:

Prawns - 500 gms

Onion - 2 nos

Tomato - 2 nos

Green chilly - 2 nos 

Fennel seeds - 1 tsp

Ginger Garlic paste - 2tsp

Turmeric powder - 1 tsp

Chilly powder - 1 tsp

Coriander powder - 1 1/2 tsp

Salt - to taste

Oil - 4tsp

Curry & coriander leaves - as required

Preparation:

1)Boil the prawn prawn for 10 minutes with turmeric powder and salt to taste.

2)Heat a kadai, add  oil, fennel seeds, then add onion saute till the onion is transparent in colour,  and next add ginger garlic paste and green chillies fry them till raw smell goes well

3)Then add tomatoes, salt and turmeric powder fry well till the raw smell goes.

4)Add red chilly powder and coriander powder stir well and add prawns..close the lid

5)Fry prawns till the oil separates

6) Finally garnish with curry & coriander leaves

Peas Rice


Ingredients:

Frozen Peas - 1cup

Boiled Rice - 2cups

Onion chopped - 2nos

Tomato Chopped - 2nos

Green chilly - 3nos

Ginger Garlic paste - 1tsp

Cloves = 2nos

Patta - 1 medium size

Fennel seeds - 1/2tsp

Oil - 3tsp

Turmeric powder - 1/2 tsp

Salt - to taste

Preparation:

1)Heat a kadai, add oil, fennel seeds, cloves and patta saute them and  then add chopped onions fry till it turns transparent

2)Add Tomatoes, tumerice powder, green chillies and salt mix them and close the lid...cook till oil separates

3)Then add peas and again close the lid. After peas cooks well, finally add boiled rice and mix them evenly and adjust salt.

Peas rice is ready to serve.

Freezed Banana Milk Shake


Ingredients:

Boiled Milk/Pasteurised milk - 1 glass

Banana - 2 nos

Cashwnets - 4 to 5 nos

Sugar - 1/2 cup

Preparation:

1)Boil the milk, cool it and keep in the freezer for 1 hour

2)Take out the freezed milk, grind it  with banana, cashwnets and sugar

Freezed banana  milk shake is ready to serve

Tandoori chicken


Ingredients:

Chicken leg - 3 or 4 pieces

Kashmiri chilly powder - 3tsp

Cloves - 2nos

Cardomam - 2nos

Patta -1 medium piece

Coriander seeds - 2tsp

Ginger  - small piece 

garlic - 4 to 5 flakes

Thick curd - 2tsp

Oil - 3tsp

Preparation:

1) Wash the chicken legs and grind kashmiri chilly powder,ginger garlic, cloves, patta, coriander seeds, cardomam into fine paste

2) add grinded paste, curd and oil to chicken legs and Marinate them for 4 to 5 hour in refridgerator

3)Remove the marinated chicken from refridgerator and bring it to the room temperature.Preheat the oven for 15mins at 250'C, then place marinated chicken in the rod and cook them for 25 -35mins.

Hot tandoori chicken is ready to serve with biryani/fried rice. This is supposed to  be one of india's delicious food item.

Curd Rice


Ingredients:

Boiled rice - 2cups

Curd - 1/2cup

Gatted Carrot - 1/2 cup 

Mustard seeds - 1tsp

Urad dal - 1tsp

Bengalgram dal = 1tsp

Curry & coriander leaves

Hing = 1/2tsp

Salt - to taste

Oil - 2tsp

Preparation:

1)Boil the rice and finely smash them and keep aside

2)Heat a kadai, add oil,mustardafter it splutters, add urad, bengalgram dal,curry leaves, hing,salt and add gratted carrot, off the flame

3)Finally add curd, saute them well and add it to the rice and mix them 

4)Garnish with coriander leaves

Toor Dal Dosa



Ingredients:

Tiffin rice/Raw rice - 1cup

Toor dal - 1/4 cup

Urad dal - 1/4 cup

Fenugreek - 1tsp

Oil - for sprinkle

Salt - to taste

Preparation:

1)Wash the rice, toor dal, urad dal and fenugreek and soak in water for 3 to 4 hours

2)Then grind them finely in mixer or grinder...keep batter over night for seasoning

3)Next day add salt and mix them well...Heat a tawa, pour the batter and spread them roundly

4)Sprinkle oil and heat both sides for 2mins

Serve toor dal dosa with coconut chutney, its a delicious food to eat.

Gulab Jamun





Ingredients:

Instant gulab jamun mix flour- 2cups
Water - 1/2 cup
Sugar - 4cups
Cardamom - 2nos
Oil/Ghee - for deep frying

Preparation:

1)Take a thick bottom vessel, add sugar(4cups) and water( 1/2cup) bring it to boil. When it becomes thick syrup, add cardamom and off the flame
2) Take a bowl put instant gulab jamun mix flour into it..add Water little by little (1/2cup)
3) Mix them smoothly and make small balls without applying much force
4)Heat a kadai, add ghee/oil..then fry the balls till it turns brown in a low flame
5)Put the fried balls into sugar syrup




Instant gulab jamun is ready to eat, serve it with ice cream.

Green Coconut Chutney



Ingredients:

Coconut gratted - 1cup

Green chilly - 2nos

Ginger - small piece

Coriander leaves - 1/2cup

Mint leaves - 4 to 5 leaves

Salt - to taste

For seasoning:

Mustard seeds - 1tsp

Curry leaves - as required

Oil - 2tsp

Preparation:

1)Put the coconut, coriander leaves, mint leaves, ginger, salt and green chilly into mixie jar and grind them into fine paste

2)Transfer the paste to a bowl

3)Heat a kadai, add oil, mustard seeds after it splutters then add curry leaves and add it to the paste

Green chutney is now ready to serve. It goes well with Dosa and idly.

Veg. Paneer Pulav and Award

Now comes my recipe....



Ingredients:

Basmati rice - 1 cup

Carrot - 1 nos

Beans -4 nos

Paneer - 1cup(chopped into cubes)

Onion - 2 nosGreen chilly - 2nos

Ginger & garlic paste - 1tsp

Cloves - 3nos Patta - 1no

Bay leaves - 1no

Fennel seeds (sombu)- 1Tsp

Mint leaves - 1/2cup

Ghee - 2tsp

Salt - to taste

Oil - 2tsp



Preparation:

1)Heat a kadai, add oil fry the paneer cubes till it turns light brown and keep aside
2)In a pressure cooker heat ghee add fennel seeds, cloves, patta and bay leaves fry for 2mins

3)Add onion, fry till it turns brown and add green chillies, ginger and garlic paste

4)After the ginger & garlic paste cooks well...add carrot chopped, beans chopped, salt and saute for few mins

5)Then add basmati rice and add 2 cups of water,add mint leaves, fried paneer cubes and close the pressure cooker with whistle and let it cook for 2 whistles.

6) Ones cooked the paneer pulav is ready for serving

Hi friends, I am backkkkk!!!!....with Pan cake


Ingredients:

Maida flour - 1 cup

Sugar - 1/4 cup (powdered sugar)

egg - 2 nos

Banking soda - a pinch

Preparation:

1) Take 1cup of maida flour in a bowl, then add sugar, eggs and banking soda.

2)Mix them till it becomes fine batter then heat a tawa pour the batter(dont spread) and cook it in a closed lid.

3) Heat both sides for 3mins and serve it with honey.

Semiya kesari(Vermicelli)


Ingredients:

Vermecilli / Semiya - 1 cup

Sugar - 1 cup

Ghee - 2 tsp

Water - 2 cups

Cardomom powder - 1/4 tsp

Cashew nuts - 5 nos

Kesari colour - a pinch

Preparation:

1)In a pan, heat ghee and roast the cashew nuts remove it and keep aside.

2)Roast the semiya till it turns brown and keep it aside.

3)In the same pan, Pour 2cups of water and bring it to boil. Add the Vermecilli and cook  till it absorbs water.

4)Then add the sugar, kesari colour, cardomom powder and sim for 10mins.

5)Finally garnish it with cashew nuts.

Sunday's special - Nadan fish fry


Ingredients:

Butter fish(sankara meen) - 1/2kg

Small onion - 5-6nos

Red chilly powder - 1tsp

Pepper corns - 7-8nos

Ginger - 1tsp(chopped)

Oil - as required

Turmeric powder - 1/2tsp

Preparation:

1)Grind the small onions, red chilly powder, pepper corns,ginger, salt and turmeric powder all together into fine paste

2)Marinet fish with the above paste for 1/2hr

3)Heat oil in a tawa and fry the marinated fish for 10-15mins.

Nadan fish fry is ready to serve.It is a delicious food.

Beetroot pachadi and Award time


Ingredients:

Beetroot - 1no medium size

Gratted coconut - 1/2cup

Curd - 1/2 cup

Cumin - 1tsp

Small onion - 10 -12 nos

Curry leaves - for seasoning

Red chilly - 3nos

Mustard seed - 1tsp

Oil - 2tsp

Salt - to taste

Preparation:

1) Chop the beetroot and add little water with salt ,cook them and keep aside

2) Grind coconut, small onion and cumin seeds into fine paste and add to the beetroot, cook for 10-15mins

3) Then add curd and off the flame(after adding curd should not heat it)

4) For seasoning, heat a kadai, add oil, mustard seeds, red chilly and curry leaves and add it to the beetroot pachadi.

The beetroot pachadi is ready to serve.

Ada Prathaman - 50th Post


Ingredients:

Rice ada - 1cup

Jaggery - 250 gms

Coconut milk - 1 1/2cups

Water - 2glass

Ghee - 2tsp

Cardamom - 2nos

Cashwnets - 5-6nos

Preparation:

1) Boil the ada with water till it becomes soft

2) Then dissolve the jaggery in water and add it to the ada and allow them to boil till it turns thick

3)Add cocount milk and keep in flow flame and heat it for 10mins and stir well

4)Heat ghee in a pan and put the cashwnets, fry them till brown and add it to the prathamam

5) Finally add the cardamom to it. Ada prathamam is ready to serve.

Spicy Chettinad chicken


Ingredients:

Chicken -  500gms

Onion - 1no

Tomato - 1no

Ginger&garlic paste - 1tsp

Mustard seeds - 1tsp

Coriander & curry leaves - to garnish

Salt - to taste

Oil -3tsp

To grind:

Cloves - 2nos

Funnel seeds - 1tsp

Pepper corns - 1tsp

Red chilly - 4 nos

Patta - medium size

Cumin - 1tsp

Coriander seeds - 1tsp

Poppy seeds - 1/2tsp

Heat a kadai without oil, fry the above ingredients..after it cool,  grind them into fine powder

Preparation:

1)Heat oil in a Kadai, add mustard seeds then add onion  and add ginger&garlic paste saute them for few mins till raw smell goes

2)Add tomato fry till oil separates

3)Then add the grinded masala powder to it and add little water boil them for 3-4mins 

4)Add chicken to it and cooks them for 10-15mins(if u need u can also add coconut milk after chicken becomes soft)

5)Finally garnish with coriander & curry leaves

This food item goes well with: chappathi,rice and naan
