Parupu chamanthi/Toordal chutney


Ingredients:

Toordal - 1/2cup

Gratted coconut - 1/2cup

Red chilly - 3nos

Tamarind - small piece

Garlic - 1 flakes(optional)

Ginger - small piece(optional)

Salt - to taste

Preparation:

1)Heat a kadai, without oil add toordal, red chilly, garlic and giner fry till dal turns light brown

2)After it cools, grind with coconut,tamarind and salt into fine paste

Goes well with dosa, idly and kanji.


Payaru Thoran


Ingredients:

Dried payaru - 1 cup

Coconut - 1/4cup(gratted)

Red chilly - 2-3nos

Curry leaves - as required

Onion - 1no(chopped)

Oil- 2tsp

Mustard seeds - 1tsp

Hing - A pinch

Salt - to taste

Preparation:

1)Soak the payaru in water overnight

2)Next day, boil them with water and salt till it becomes soft

3)Heat a kadai, add oil, mustard seeds, hing, curry leaves and onion saute them 5-6mins

4)Then add payaru and mix and adjust salt

5)Finally add gratted coconut and saute for 2-3mins

Payaru thoran is ready to serve with rice and any food variety.

Chembu/Yam Fry And Award


Ingredients:

Chambu (yam)- 1/2 kg

Red chilly powder - 1 1/2 tsp

Coriander powder - 1/2 tsp

Tumeric powder - 1/2 tsp

Curry leaves - as required

Oil - 4-5tsp

Mustard seeds - 1 tsp

Hing - 1/2tsp

Salt - to taste

Preparation:

1)Boil the chambu with required water and peel the skin, cut into small pieces and keep aside

2)Heat a Kadai, add oil, mustard seeds, curry leaves, and hing

3)Then add chambu and fry them for 4-5mins

4)Add all powders and salt saute till it turns brown and crispy

Chambu fry is ready to serve with any variety rice.

Chicken Fry


Ingredients:

Chicken = 1/2kg

Onion - 2nos

Tomato - 2nos

Ginger&garlic paste - 1tsp

Curry & coriander leaves

Funnel seeds - 1tsp

Red chilly powder - 1 1/2tsp

Coriander powder - 1tsp

Tumeric powder - 1/2tsp

Oil - 3tsp

Salt - to taste

To Grind

Cloves - 2nos

Patta - 2 medium size

Cardamom - 1no

Grind the above ingredients into fine powder 

Preparation:

1)Heat a kadai, add oil, funnel seeds,onions saute till light brown

2)Add ginger&garlic paste fry till raw smell goes 

3)Add the chicken pieces, grinded powder, salt, tumeric,chilly & coriander powder mix and add 1/2 cup of water and close the lid and cook them for 10-15mins, till water drains

3)Then add tomatoes and fry till oil separates

Finally garnish with curry and coriander leaves. Chicken fry is ready to serve hot with rice, chapathi and naan.

Note: if adding raw chicken..please add tomatoes finally, otherwise the chicken wont be soft.

Tomato Coconut Chutney


Ingredients:

Tomato - 2nos

Small onion - 4-5nos

Red chilly - 2nos

Tamarind - small piece

Coconut - 3-4tsp(gratted)

Oil - 3tsp

Salt - to taste

For seasoning:

Urad dal - 1tsp

Curry leaves 

Mustard seeds - 1tsp

Preparation:

1)Heat a kadai, add oil ,onion,red chilly,and tomatoes saute them till raw smell goes and tomatoes mash finely.

2)After it cools, grind the ingredients with salt and coconut into paste

3)Finally season it with mustard,urad ,tamarind and curry leaves

Serve it with dosa and idly.

Rice Kheer


Ingredients:

Milk - 5 cups

Basamathi rice - 1/4cup

Sugar - 3/4cup

Cashewnets -8-10nos

Preparation:

1)Boil milk in heavy bottomed pan  

2)Add basamathi rice, cashews and boil till it cooks and turns thick

3)Then add sugar and keep in a medium flame and stir inbetween

4)Cook till sugar dissolves well

Rice kheer is ready to hot or cold

Pineapple Halwa


Ingredients:

Pineapple - 1no

Ghee - 3-4tsp

Sugar - 1/2cup

Milk - 1 glass

Water - 1/2cup

Cardammom (powdered) - 2 nos

Cashewnets - as required

Preparation:

1)Chop the pineapple and grind them into paste and keep aside

2)Heat a kadai, add water and bring it to boil then add grinded pineapple paste saute and cook till pineapple absorbs water

3)Then add milk and boil...stir till it becomes thick

4)Add sugar and keep stirring in a medium heat 

4)Finally add ghee, cardamom powder  and cashewnets 

Sweet and hot halwa is ready.

vandaka kurma(Okra) And Awards!!


Ingredients:

Vandaka (okra) - 250 gms

Coconut milk - 1/2 cup

oil - 2-3tsp

salt - to taste

To Grind:

Cashwnets - 5-6nos

patta - 2nos(medium)

Cloves - 2nos

Fennel seeds - 1tsp

Ginger - small piece

Garlic - 4 flakes

Red chilly powder - 1tsp

Green chilly -1no

Preparation:

1)Make the vandaka into small piece and keep aside

2)Heat a pan, add onion saute for 4 to 5mins

3)Add vandaka to it and fry finely till oil separates

4)Then add ground paste, little water and salt, close the lid and allow them to cook

5)Finally add coconut milk heat for few mins

Vandaka kurma is ready to serve with chapathi, naan and any food variety

Vanilla cookies and Award!


Ingredients:

All purpose Flour - 1 3 /4 cup

Baking Powder - 1/2 tsp

Salt -1/2 tsp

Egg - 1 no.

Sugar powdered- 1 cup

Butter - 1/2 cup

Vanilla - 1 tsp

Preparation:

Beat the butter nicely and make it smooth

To it add vanilla,egg,salt, sugar and baking powder and beat well

Add flour to it and mix it into a smooth dough and keep it in fridge for 30mins.Please see to it that the dough is not sticky.

Then make any shapes and again keep it in fridge for 15mins

Pre heat the oven for 10 minutes at 150 C.

Bake the cookies for 15 minutes and the cookies is ready to serve.
