Egg roast - kerala style






Ingredients:


Egg - 5nos

Onion - 4-5nos

Ginger & garlic - 1tsp
Tomato - 1no ripe

Chilly powder - 1tsp

Coriander powder - 1tsp

Tumeric powder - 1/2tsp

Garam masala powder - 1/2tsp(optional)

Mustard seeds  - 1tsp

Curry leaves - few

Oil - 3tsp

Salt to taste




Preparation:



1)Boil the eggs, remove the skin and keep aside
2)Heat a kadai, add oil, add mustard seeds after it splutters, add onion and green chilly,saute till onions fries well
3)Add giner n garlic saute for few mins
4)Add tomato,salt and tumeric, cook till oil separates
5)Then add chilly pwd, coriander pwd and garam masala fry them finely or cook for 4-5mins
6)Finally add eggs and curryleaves, mix well and serve hot with rice or chapathi.

Sweet Corn Soup






Ingredients:


Sweet Corn - 1cup
Carrot - 1/4 cup chopped
Beans - 1/4cup chopped
Garlic - 2flakes (optional)
Butter - 1/2 tsp
Pepper - as required
Salt - to taste



Preparation:


1)Take 1/2cup of corn(i used frozen corn), little water and grind them into fine paste and keep aside
2)Heat a kadai, add butter, garlic and saute for few mins

3)Add remaining corn n vegs and little water, cook untill vegs turns soft

4)Then add the paste and cook untill it turns thick

5)Finally add pepper, salt and serve hot

Coconut Rice









Ingredients:


Coconut grated - 1/2cup


Boiled rice - 1 1/2cup


Green chilly - 2nos


Ginger - 1tsp chopped


Coconut oil - 1tsp


Mustard seeds - 1/2tsp


Jeera - 1/2 tsp


Cashewnuts - 3- 4nos


Urad dal - 1/2tsp


Curry leaves - few


Preparation:


1)Heat a kadai, add oil, mustard seeds, after splutters, add jeera, urad dal, Cashewnuts and curry leaves saute for few mins


2)Add coconut and fry for 4- 5mins or till nice flavour starts


3)Add rice,adjust salt and mix well....serve hot with papad.

Aviyal





Ingredients:


Vegetables - Carrot, drumstick, beans, white pumkin and yam (cut into 1inch lengthwise)


Grated coconut - 1/2cup


Green chilly - 2-3nos


Curd - 1/4cup


Cumin seeds - 1/2tsp


Coconut oil -1tsp


Cury leaves - few


Tumeric powder - 1/2tsp


Salt - to taste



Prepartion:



1) Grind the coconut, green chilly and cumin seeds into fine paste and keep aside


2)  Heat a kadai, add all vegs, little water,tumeric powder,curry leaves and salt, cook till it turns soft (dont overcook)


3)Add the coconut paste to the vegetables and cook for few mins


4)Then add curd and mix well and off the flame 


5) Heat the coconut oil and add it to the aviyal and serve hot with rice.

Mysore Pak / Diwali Sweets



               Mysore pak is my favourite sweet i learnt this from  my mom, for all diwali she do it. This is the 2nd time i am try, it came out very well and this recipe i have  already posted and this time want to show step wise pics. Advance Happy Diwali!



Ingredients:


Bengal gram flour - 1cup
Sugar - 2cups
Ghee - 1 cup
Water - 1/2cup
Cardamom powder - 1tsp




Preparation:


1)Heat a kadai, add 1tsp Ghee and flour, fry till raw smell goes and turns light brown & keep aside


2)Heat the Ghee in a low flame continously.(dont off the flame)


3)In another flame, heat heavy bottomed vessel / i used non stick kadai, add water and sugar heat till it becomes thick (string consistancy)




  4)Add the flour slowly into the sugar syrup mix well continously so that no lumps are formed and Add the ghee little by little, stir well..when it becomes thick  



5)Grease the plate with ghee and pour into it the mix, when it cools cut them into desired shapes.

Eggless Banana Cake


     



Ingredients:


All purpose flour - 1cup


Banana - 1no ripe


Butter - 1/4 cup


Water/Milk - 1/4 cup


Sugar - 1/3 cup


Bk. pwd - 1tsp


Bk. Soda - 1/2 tsp


Banana / Vanilla essence - 1tsp


Salt - a pinch



Prepartion:


Preheat the oven at 175"c


Combine the flour,bk soda, bk powd,sugar and salt and keep aside


Combine milk,melted butter and banana essence, and add it to the flour and mixwell without lumbs


Grind the banana into fine paste and add it to the flour and mix it slowly


Pour them into 8 inch tray, bake for 35-40mins at 175'c


*Note: if the mixture is too thick u can add little water.

Coriander Tomato Chutney / Kothamalli thakkali chutney





Ingredients:

Tomato - 2nos (chopped)

Coriander leaves - 1/2cup

Onion - 1no  (chopped)

Curry leaves - few

Garlic - 2 flakes

Red chilly - 2-3nos

Fennel seeds - 1/2tsp(optional)

Urad dal - 1/2tsp 

Oil - 1tsp

Salt - to taste




Preparation:

1)Heat a kadai, add fennel seeds, urad dal saute till light brown and add onion, garlic, red chilly and curry leaves fry for few mins

2) Add tomatoes, coriander leaves and salt fry till the tomatoes mashes well, after it cools grind them into fine paste

3)Serve with idly or dosa

Chocolate Muffins









Ingredients:


All purpose flour - 3/4cup

Coco Powder - 1/4cup

Egg - 1no

Oil - 1/4cup

Milk - 1/4cup

Powdered sugar - 1/2cup

Baking powder - 1tsp

Baking Soda - 1/4tsp

Salt - a pinch

Preparation:


1)Preheat the oven at 200"c

2)Sift the flour, add sugar,b.pwd,b. soda,coco pwd and salt

3)Combine the oil, egg, milk and vanilla essence, and add it to the flour and mixwell without lumbs

4) Pour batter into greased muffin tray upto 2/3rd.

5)Bake for 10 -12mins at 200''c

Coconut Ladoo




Ingredients:


Desiccated coconut - 1cup
Condensed milk - 3/4 - 1cup
Cardamon powder - 1/2tsp
Cashwnets - 5-6 nos(chopped)



Preparation:


1)Heat a non-stick kadai or heavy bottomed vessel, add coconut and fry for 1min in low flame
2)Add condensed,  cardomon pwd, cashwnets and mix well and remove from the heat
3)After it cools, make a  small balls and rolls the balls in coconut and serve

Green Moong Dal Sundal






Ingredients: 


Green Moong dal - 1cup
Gratted Coconut - 1/4cup
Mustard Seeds - 1tsp
Hing - 1tsp
Oil - 2tsp
Salt - to taste
Curry leaves - few




Preparation:


1)Soak the green moong dal overnight & nextday pressure cook with salt and keep aside
2)Heat a kadai, add oil, mustard seeds after splutters, add curry leaves and hing
3)Add dal and cook them for 2-3mins, finally add grated coconut and saute for few mins

Carrot Thoran/Poriyal/Stir Fry



Ingredients:


Carrot - 2nos (grated)
Grated coconut - 2tsp
Green chilly - 2nos
Garlic flakes - 4-5nos(optional)
Shallots - 3nos(chopped)
Urad dal - 1/2tsp
Mustard seeds - 1/2tsp
Oil - 2tsp
Tumeric pwd -  
Curry leaves - few 
Salt - to taste   





Preparation:

1)Heat a kadai, add oil, when its hot add mustard seeds after splutters, add urad dal saute them till it turns little brown

2)Add shallots(small onion), green chilly and curry leaves saute them for 2mins

3)Then add carrot,garlic,tumeric pwd,and salt, cover and cook them until it turns soft (stir inbetween)
  
4)Finally add coconut and mix well 

Serve hot with sambar rice, rasam and curd rice.

Carrot Soup



Ingredients:


Carrot - 2 nos (grinded finely)

Tomato - 1 no(small)  (grinded finely) 

Garlic - 2 flakes

Butter - 1tsp

Milk/Cream - 1/4 cup

Maida - 1 tsp

Pepper - 1 tsp




Preparation:


1. Heat a kadai, add butter n garlic saute them for few mins

2. Then add grinded carrot, tomato,salt and little water and bring to boil or till raw smell goes

3. Mix the maida in 2tsp of water and add it to the carrot, stir them with lumps

4. Finally add the milk and pepper, cook for 2 to 3mins and serve hot.

Vegetable Appam

Ingredients:


Idly batter - 1cup
Onion - 1no
Vegetables - carrot and beans(chopped finely)
Gratted coconut - 2tsp
Mustard seeds - 1/2tsp
Cumin seeds - 1tsp
Curry leaves - few
Coriander leaves - few
Ginger - small piece
Green chilly - 2nos
Salt - to taste


Preparation:

1)Heat a kadai, add mustard seeds, cumin, ginger,chilly, Vegetables ,coconut, and onion fry them for few mins and finally add curry and coriander leaves

2)Then add the mixture to the idly batter and mix and adjust salt

3)Heat a unniappam pan, add very little oil into each section..then pour the batter in it. Cook both the sides for 2-3mins till brown.

Rose milk Pudding

    




                                  First time I am trying this pudding and i tried from my sweet friend Saras blog, it came out very well and my kid enjoyed it. 
Thank you Saras for this sharing this recipe.    
    
 Ingredients:


Agar Agar - 1cup

Milk - 1cup

Sugar - 1/2cup

Rose syurp - 1tsp (can use any syurp)

Water - 1/2cup

  



Preparation:

1)Soak agar agar in the water for 1 to 2 hours

2) Heat the agar agar and bring to thick.

3)Then add milk when it starts boiling slowly add sugar 

4)Stir till sugar dissloves and allow it to cool and pour it in the jelly mould

5)Keep it in the fridge for 10-15mins and enjoy it.

Paneer Peda





Ingredients:

Paneer grated - 1/2cup
Milk powder - 1/2cup
Powdered sugar - 1/2cup
Ghee - 2tsp
Cardamom powder - 1/2tsp



Preparation:

1)Heat a kadai, add ghee, grated paneer,milk powder,cardamom powder and sugar, mix them well and stir continously until the mixture starts to separate. 

2)Make it to dough form and off the flame.

3)Then make the dough into small patties or balls.
