Gobi Paratha







Ingredients:

For dough:


Wheat flour - 1cup
Salt - to taste
Hot water - as required


For Masala:


Cauliflower - 1cup (chopped finely)
Grated carrot - 1/4cup(optional)
Coriander leaves - handful
Cumin seeds - 1tsp
Tumeric pwd - 1/4tsp
Chilly pwd - 1tsp
Gram masala - 1/4tsp
Ginger & garlic - 1/4tsp
Salt - to taste



Preparation:


1)Add flour, salt and water. Make a soft dough and set aside for 1/2hr


2)Heat a kadai, add oil, cumin seeds, cauliflowers, carrot, ginger n garlic, saute and cook for few mins


3)Add all powders, salt  and cover and cook, till it turns soft


4)Finally add coriander leaves and keep aside




5)Take the small amount of dough,then roll and spread into small chapathi, take a tablespoon of masala and place it in middle of the dough and cover it and keep aside for 5-6mins

6)Now slowly spread the stuffed dough with ur hand or chapathi roller


7)Heat a tawa, when its hot, put the chapathi and sprinkle little oil, cook both the sides till light brown.

Rava Dosa



Ingredients:

Rava - 1cup
Onion - 1no1
Cumin seeds - 1tsp
Green chilly - 2nos(chopped)
Ginger - 1 tsp (chopped)
Pepper - 1/2tsp
Rice flour - 1 tsp
Curry & coriander leaves - few
Salt - to taste
Oil - to sprinkle

Preparation:

In a vessel, put rava, thinly sliced onion, pepper(whole),ginger, cumin seeds, salt, rice flour and curry n coriander leaves and add 3/4cup water. * batter should be watery.


Heat a tawa, (the tawa should be very hot). Take the batter in a small glass or bowl, jus pour the batter on the hot tawa and sprinkle oil.


Cook the dosa till crispy and light brown. 
(if u want u can turn the dosa and cook for few mins)



Onion rava dosa is ready to serve hot with coriander chutney or your desire side dish.

Vegetable Appam

Ingredients:


Idly batter - 1cup
Onion - 1no
Vegetables - carrot and beans(chopped finely)
Gratted coconut - 2tsp
Mustard seeds - 1/2tsp
Cumin seeds - 1tsp
Curry leaves - few
Coriander leaves - few
Ginger - small piece
Green chilly - 2nos
Salt - to taste


Preparation:

1)Heat a kadai, add mustard seeds, cumin, ginger,chilly, Vegetables ,coconut, and onion fry them for few mins and finally add curry and coriander leaves

2)Then add the mixture to the idly batter and mix and adjust salt

3)Heat a unniappam pan, add very little oil into each section..then pour the batter in it. Cook both the sides for 2-3mins till brown.

Rava / Sooji Kichadi



Ingredients:

Rava - 1cup

Onion - 3no(chopped)

Tomato - 1no(chopped)

Carrot - 1/4cup(cut into cubes)

Beans - 1/4cup(cut into cubes)

Green chilly - 2nos

Ginger & garlic paste-1/4tsp

cloves- 2nos

Cinamon -small piece

Tumeric powder - 1/2tsp

Bay leaves - 1no

Oil - 1tsp

Ghee - 1tsp

Mustard seeds - 1 tsp

Curry & coriander leaves - few



Preparation:

1)Dry roast the rava for 5mins and set aside

2)In a kadai, add mustard seeds after splutters, add onion, green chilly and ginger n garlic paste saute them till raw smell goes, then add cloves, bayleaves and cinamon saute till nice aroma starts

3)Add vegetables and salt, cover and cook till it turns tender

4)Then add tomato and saute for 4-5mins and add 2cups of water and  bring to boil

5)Slowly add the rava to the boiling water and mix them well, then cover and cook till the water absorbs.

6)Finally add ghee, curry n corainder leaves.

Hot Rava Kichadi is ready to serve. u can have it with curd or onion raita.

Carrot Dosa

Ingredients:

Carrot - 1medium

Dosa batter - 1cup

Jeera - 1/2tsp

Curry leaves - few

Coriander leaves - few

Red chilly powder - 1/4tsp (optional)

Salt - to taste


Preparation:

1)Grind the carrot with little water and mix with dosa batter

2)Add curry,corainder leaves, red chilly powder , jeera and salt

3)Heat a tawa, pour the batter and spread them roundly

4)Sprinkle oil and heat both sides for 2mins

Hot dosa is ready and have it with coconut or onion chutney.

Masala chapathi


Ingredients:

Wheat flour - 1/2cup

Plain flour/Maida -5tsp

Bengal gramdal Flour - 5tsp

Rice Flour - 5tsp

Coriander leaves - few(chopped finely)

Cumin seeds - 1/4 tsp

Hing - 1/4tsp

Chilly powder - 1/2tsp

Ghee/Oil - 1tsp

Salt - to taste

Preparation:

1)In a bowl, mix together all the flour, and other above ingredients and add water little by little , knead the dough and keep aside for 1/2hr

2)Take a small portion of dough, make small balls and roll them roundly & evenly

3)Heat a tawa, roast the chapathi using little oil for 1-2mins

Hot masala chapathi is ready to serve with pickle.

Carrot Sandwich



Ingredients:

Bread - 4-6 slices

Gratted carrot - 1 cup

Onion - 1no

Tomato - 1no

Green chilly - 2nos

Ginger & garlic - 1tsp(chopped)

Mustard seeds - 1tsp

Tumeric powder - a pinch

Salt - to taste

Oil - 1tsp

Coriander leaves - few

Preparation:

1)Heat a kadai add oil, mustard, onion, green chilly, ginger&garlic saute them for few mins

2)Add tomato saute for a while, then add tumeric powder, salt, carrot and coriander leaves mix well & cook for 2-3mins and off the flame

3)Spread butter on the bread slices and fill the carrot mixture

4)Heat a tawa or toaster, tost the bread both sides and serve hot

Pongal


Ingredients:

Raw rice - 1cup

Moong dal - 1/4cup

Ghee - 2-3tsp

Cumin seeds -  1tsp

Pepper corns - 1tsp

Ginger - small piece (chopped)

Curry leaves - for seasoning

Cashwnets - 5-6nos

Preparation:

In a pressure cooker, add rice and moong dal with 4cups of water and salt...close the pressure cooker with whistle and let it cook for 3 whistles.

Heat a kadi, first fry the caswnets till light brown, drain the cashwnets  and keep aside

In the same kadai, add ghee, pepper corns, ginger, cumin and curry leaves 

Add the seasoning to the rice and mix well. Pongal is ready to serve with coconut chutney and crispy vada

Karaappam


Ingredients:

Idly batter - 1cup

Onion - 1no

Gratted coconut - 2tsp

Curry leaves - few

Coriander leaves - few

Green chilly - 2nos

Salt - to taste

 

Preparation:

Karaappam is ready to serve with tomato chutney

Toor Dal Dosa



Ingredients:

Tiffin rice/Raw rice - 1cup

Toor dal - 1/4 cup

Urad dal - 1/4 cup

Fenugreek - 1tsp

Oil - for sprinkle

Salt - to taste

Preparation:

1)Wash the rice, toor dal, urad dal and fenugreek and soak in water for 3 to 4 hours

2)Then grind them finely in mixer or grinder...keep batter over night for seasoning

3)Next day add salt and mix them well...Heat a tawa, pour the batter and spread them roundly

4)Sprinkle oil and heat both sides for 2mins

Serve toor dal dosa with coconut chutney, its a delicious food to eat.

Hi friends, I am backkkkk!!!!....with Pan cake


Ingredients:

Maida flour - 1 cup

Sugar - 1/4 cup (powdered sugar)

egg - 2 nos

Banking soda - a pinch

Preparation:

1) Take 1cup of maida flour in a bowl, then add sugar, eggs and banking soda.

2)Mix them till it becomes fine batter then heat a tawa pour the batter(dont spread) and cook it in a closed lid.

3) Heat both sides for 3mins and serve it with honey.

Paneer dosa (kids menu)


Ingredients:

Dosa batter 

Paneer - 3 to 4 cubes(chopped)

Carrot gratted - 2tsp

Green chilly  -1/2 no. or pepper powder a pinch

Coriander leaves - 1tsp(chopped)

Ghee  to sprinkle

Preparation: 

1)Heat tawa and put the dosa batter and spread them round

2)Then add gratted carrot, paneer, green chilly and coriander leaves 

3)Sprinkle ghee around the dosa

Bread upma





Ingredients:

Bread - 6 slices

Onion - 1no

Tomato - 2nos

Red chilly - 2nos

urad & channa dal - 1/2cup

Ginger&garlic paste - 1tsp

Curry & coriander - to garnish

Oil - 2tsp

Salt - to taste

Preparation:

1)Cut the bread into small pieces and keep aside

2)Heat kadai and add oil, mustard seeds, urad, channa dal and curry leaves. Then add onion fry till it becomes transparent, add ginger garlic paste and red chillies saute them for 2mins

3)Add tomatoes and salt fry till it becomes soft. Then add the bread pieces and garnish with coriander leaves

Aadai


Ingredients:

1)Urad dal - 1/2cup

2)Bengal dal - 1/2cup

3)Thuvar dal - 1/2cup

4) Moog dal - 1/2cup

5)Raw rice - 1/2cup

6)Sombu - 1Tspoon

7)Cumin - 1Tspoon

8) Red chilly - 4 nos

9)Salt - to taste

10)Oil - as required

11)Asafoetida (Hing) - 1 pinch

12)Chopped Onions - 2no

13)Curry leaves

14)Fenugreek seeds - 1/2 tsp

Preparation:

1)Soak all the above dals and rice in water for 1/2 hour

2)Then add the sombu, Asafoetida, fenugreek seeds, red chillies, cumin seeds into the soaked items and grind them coarsely

3) Add the onions, curry leaves and salt in to the batter

4)Now place a pan and when it is hot place spread the batter into a round shape.

5)Pour oil on the sides and center and cook both sides until crisp
