Papaya Muffins


Ingredients:


All purpose flour - 1cup

Sugar - 1/4 cup

Papaya puree - 1/2cup

B. soda - 1/2cup

Choco chip - 1/4 cup(optional)

Vanilla essence - 1tsp

Egg - 1no

Butter - 2tsp

Salt - a pinch

Preparation:


1. Preheat the oven at 325'f/160'c

2. Shift the flour and add sugar,b soda,choco cips

3. Combine the butter, egg, vanilla essence, and papaya puree add it to the flour and mixwell without lumb

4. Pour batter into greased muffin tray upto 2/3rd.

5. Bake for 20-25 mins at 160'c

Mint Chutney




Ingredients:

Mint leaves - handful

Coriander leaves - handful

Gratted Coconut - 1 cup

Green chilly - 2-3nos

Ginger - small piece

Tamarind - very small piece

Urad dal - 1tsp

Oil - 2tsp

Salt


Preparation:

1. Heat a kadai, add oil, urad dal saute them till light brown, drain and keep aside

2. In the same kadai, add mint,coriander leaves, green chilly and ginger saute them for 5-6mins

3. Off the flame and after it cools, in the mixer put coconut, urad dal,salt,tamarind and mint leaves mixuture grind them into fine paste

Mint chutney is ready to serve with idly and dosa.

Papaya Smoothie



Ingredients:

Papaya ripe - 1 cup chopped

Honey - 1tsp

Sugar - as required

Milk - 1cup

Vanilla essence - 1tsp optional

Preparation:

Blend all the above ingredients into the fine paste and serve with ice cupes.

Vanilla Muffins



Ingredients:

Milk - 1/4cup
Powdered sugar - 1/2cup
Baking powder - 1tsp
Salt - 1/2tsp
Choco chips/chocolate rice - for topping




Preparation:


1)Preheat the oven at 200"c
2)Sift the flour, add sugar,b.powder and salt
3)Combine the butter, egg, milk and vanilla essence, and add it to the flour and mixwell without lumbs
4) Pour batter into greased muffin tray upto 2/3rd. Put choco chips/rice on the top.
5)Bake for 10 -12mins at 200''c

Carrot Dosa

Ingredients:

Carrot - 1medium

Dosa batter - 1cup

Jeera - 1/2tsp

Curry leaves - few

Coriander leaves - few

Red chilly powder - 1/4tsp (optional)

Salt - to taste


Preparation:

1)Grind the carrot with little water and mix with dosa batter

2)Add curry,corainder leaves, red chilly powder , jeera and salt

3)Heat a tawa, pour the batter and spread them roundly

4)Sprinkle oil and heat both sides for 2mins

Hot dosa is ready and have it with coconut or onion chutney.

Vegetable Soup


Ingredients:

Tomato - 2nos

Onion - 1no

Carrot - 1/4 cup (chopped)

Beans - 1/4 cup (chopped)

Capsicum - 1/4 cup (chopped)

Garlic - 4flakes

Pepper powder- 1tsp (as required)

Cornflour/maida - 1 tsp 

Salt - to taste

Butter - 1tsp




Preparation:

1)Heat a kadai, add butter, onion, garlic saute them for few mins

2)Add tomato and all vegetables, salt and pepper powder, mix it and close the lid & cook them for 2-3mins

3)Mix the cornflour in the water and add it to the vegs. 

4)Grind the mixture and filter and serve it

Mutton Soup


Ingredients:

Mutton chest bone - 1/4 kg

Shallots/small onion - 4-5nos

Tomato - 1no(medium)

Cumin seeds - 1/2tsp

Black Pepper - 1tsp

Ginger - small piece

Garlic - 2 flakes

Green chilly - 1no

Cinamon - small piece

Cloves - 2nos

Tumeric powder - 1tsp

Oil - 1tsp

Curry & coriander leaves - few

Salt - to taste



Preparation:

1)Crush the onion, ginger & garlic, cumin seeds, pepper,cinamon, cloves together and keep aside

2)Heat a pressure cooker, add oil and crushed onion ingredients & saute them for few mins

3)Then add tomato,tumeric pwd and salt, cook them for 1-2mins

4)Add mutton pieces and cook till oil separates

5)Finally add 3 glasses of water and coriander n curry leaves, close the lid and pressure cook till 4 whistles.

Hot Mutton soup is ready to serve.
