Spicy Chettinad chicken


Ingredients:

Chicken -  500gms

Onion - 1no

Tomato - 1no

Ginger&garlic paste - 1tsp

Mustard seeds - 1tsp

Coriander & curry leaves - to garnish

Salt - to taste

Oil -3tsp

To grind:

Cloves - 2nos

Funnel seeds - 1tsp

Pepper corns - 1tsp

Red chilly - 4 nos

Patta - medium size

Cumin - 1tsp

Coriander seeds - 1tsp

Poppy seeds - 1/2tsp

Heat a kadai without oil, fry the above ingredients..after it cool,  grind them into fine powder

Preparation:

1)Heat oil in a Kadai, add mustard seeds then add onion  and add ginger&garlic paste saute them for few mins till raw smell goes

2)Add tomato fry till oil separates

3)Then add the grinded masala powder to it and add little water boil them for 3-4mins 

4)Add chicken to it and cooks them for 10-15mins(if u need u can also add coconut milk after chicken becomes soft)

5)Finally garnish with coriander & curry leaves

This food item goes well with: chappathi,rice and naan

Cake Pauk


Ingredients:

Maida  - 1cup

Sugar - 2cups

Water - 1/2cup

Butter - 2tsp

Cardamom - 2nos

Ghee - 4tsp

Orange essence - few drops

Preparation:

1)Heat a pan, add maida and butter fry until the flour turns light brown and keep aside

2)Heat another kadai, pour water boil it and add sugar till it becomes one thread consistency(thick syrup)

3)Add maida, ghee(3tsp), essence and cardamom and stir well until it becomes thick paste and nonsticky

4)Spread one tsp of ghee in a tray and pour the above paste into it

5) Allow it to cool for 1/2hr and cut it into desired shape

6)Decorate with cashwnets as topping

Fried rice


Ingredients

Basmati Rice - 1 cup

cabbage, capsicum, carrots, beans, spring onions, onions

Ginger&garlic paste - 1/2tsp (if required)

Pepper powder -  1 tsp

Soy sauce - 1 tbsp

Oil - 2tsp

Salt - to taste

Preparation:

1) Cook basmati rice, do not overcook and keep aside

2) Cut all the vegetables into small pieces and keep aside

3) Heat oil in a pan and add onions saute for few mins, then add ginger&garlic paste fry till raw smell goes 

4) Then add all vegetables one by one heat them for 5mins.

5) Add soy sauce, salt and rice into it and mix them well.

6) Finally add black pepper powder and garnish with spring onions.

Fried rice is ready to serve. The food will taste better  if served hot. 

This yummy fried rice is going for rice feast .

Rava Masala Vada


Weekend special

Ingredients:

Chenna dal (kadalai parupu) - 100 gms 

Rava - 5tsp

Onion chopped - 1no(Medium size)

Garlic flakes - 2nos (if required) 

Red chilly - 2nos

Coriander & curry leaves - as required

Funnel seeds - 1/2tsp

Cumin seeds - 1/2tsp

Hing - a pinch

Oil - to fry

Salt - to taste

Preparation:

1)Soak the chenna dal with water for 2hrs

2)Then grind the chenna dal(keep aside 3tsp soaked chenna dal) and red chillies coarsely

3)Add chopped onion, rava(2tsp), garlic, coriander, curry leaves, funnel seeds, cumin seeds, hing and salt to the mixture and also 3tsp soaked chenna dal

4)Make small balls and flattern them..then roll it over the balance rava.

5)Then heat oil in a pan and deep fry the vadas untill it turns golden brown

Rava masala vada ready to serve. Surely kids will like this food mainly because it will be crispy to eat.
